Reaction between ozone and colorants present in raw sugar leads to
color elimination, without affecting sucrose or reducing sugars.
In that sense, the use of ozone as decolorizing agent has great
opportunities in the field of sugar refining. The refined sugar
obtained by this method has a quality which fulfill the
international requirements established. In preliminary economic
evaluation, ozone can substitute advantageously other methods
traditionally employed.
